Freeze-dried candy is confectionery that has been processed using a freeze dryer.
Rather than drying sweets using high temperatures, freeze drying involves freezing the product and removing frozen moisture under a vacuum.
A major part of this process is called sublimation.
During sublimation, frozen water changes directly from ice into water vapour without first becoming liquid water.
As moisture leaves suitable sweets, their internal structure can change significantly.
That's what creates the unusual crunchy texture associated with many freeze-dried sweets.
How Are Freeze-Dried Sweets Made?
The exact process depends on the equipment, product and desired result, but freeze drying generally involves several stages.
1. Preparing the sweets
First, we choose sweets that we believe will respond well to freeze drying.
Not every sweet behaves in the same way.
Some expand dramatically. Some become extremely light and crunchy. Others change very little.
That's why testing different products is an important part of producing freeze-dried confectionery.
2. Freezing
The product is frozen to very low temperatures.
This prepares the moisture contained within the product for the next stages of the process.
3. Creating a vacuum
The freeze dryer creates a low-pressure environment inside its chamber.
This allows the frozen moisture within suitable products to begin leaving through sublimation.
4. Sublimation
This is where much of the magic happens.
Under the right conditions, frozen water within the product changes directly into vapour.
As moisture is removed, the structure and texture of the sweet can change.
Depending on the sweet, it may expand, become lighter or develop the distinctive crunch people associate with freeze-dried candy.
5. Finishing the cycle
We don't believe in rushing this part.

6. Packaging
Once a batch is finished, packaging becomes extremely important.
Freeze-dried products can readily absorb moisture from the surrounding air.
That's why our products are packed into suitable protective packaging, including heat-sealed bags and airtight, tamper-evident containers, depending on the product.
This helps protect the texture and freshness until you're ready to eat them.
Why Do Freeze-Dried Sweets Taste Different?

A dehydrated sweet and a freeze-dried sweet are not the same thing.

Yes.
At Who’s Got the Bag, our freeze-dried sweets are produced by us.
We don't simply purchase finished freeze-dried sweets from another company and put them into our own packaging.
Producing them ourselves gives us control over the process and allows us to test different sweets, adjust how we process them and decide when a batch has achieved the finish we're looking for.
We produce many products to order and make some of our popular lines in small batches.
For us, freshness and quality are more important than building up huge quantities of finished stock.
What Makes Who’s Got the Bag Freeze-Dried Sweets Different?
Our approach is low and slow.
Freeze drying is a technical process involving temperature, vacuum pressure, time and sublimation.
We don't want to rush a cycle simply to get more products through a machine.
We want the finished sweets to have the texture and crunch we're looking for before they leave us.
We also package our finished products carefully to help protect them from moisture.
It's a simple approach:
Make them properly. Pack them properly. Send them fresh.
Are Freeze-Dried Sweets Freshly Made?
Many of ours are produced specifically for incoming orders, while our most popular products may be produced in small batches.
This can occasionally mean a freeze-dried order takes slightly longer to dispatch than an ordinary confectionery order.
Our normal aim is to dispatch orders within 24 hours where possible, but orders containing freshly produced freeze-dried products may take between one and three working days to prepare and dispatch.
We would rather give a batch the time it needs than rush it.
How Should You Store Freeze-Dried Sweets?
The big thing to avoid is moisture.
Keep freeze-dried sweets:

In their original packaging where possible.
After opening a bag or container, reseal it properly.
Leaving freeze-dried sweets exposed to humid air can cause them to absorb moisture and gradually lose their crunchy texture.
Are Freeze-Dried Sweets the Same as Dehydrated Sweets?
No.
Although both processes remove moisture, freeze drying and dehydration work differently.
Traditional dehydration generally uses heat and airflow to remove water.
Freeze drying first freezes the product and then removes frozen moisture under vacuum, primarily through sublimation.
This difference in processing is responsible for many of the unusual textures associated with freeze-dried foods.
